1 lb sloes
5 oz sugar
1 bottle of gin
Wash and drain sloes, remove leaves and stalks.
Prick sloes with a knife all over and place in a Kilner jar, or separate into two old gin bottles with an even amount of sloes in each.
Add sugar, pour over gin. Seal tightly, store in a cool, dark place for 6 weeks, shaking once or twice a week.
Strain and squeeze gin into another jar or bottle and leave for a couple of weeks without shaking until clear and sediment has settled.
Pour or siphon carefully into two bottles, leaving the sediment behind. Top up these bottles to within an inch of the top with boiled and cooled water.
Mix well, cork (or seal well) and store for 1 month before drinking (you can drink it sooner if xmas is too close :)
