How to make Absinthe, the easy way

This recipe is based on a few on the net that I found, and merged into one. The active ingredient, Wormwood or Absinthium (Artemisia absinthium) can be found in specialist shops, mail-order, or on a holiday to North Africa, for example.

Basic ingredients
1 pint vodka
2 teaspoon wormwood (dried and minced)
1 2/3 cups sugar syrup

For initial steeping
1/2 teaspoon ground coriander (make it from fresh seeds by grinding)
1/2 teaspoon fennel seeds
1 teaspoon marjoram
2 teaspoon anise seeds
2 teaspoon angelica root, chopped
4 cardamom pods

1. Buy a bottle of good quality vodka in a 75cl bottle. Remove all but a pint and add the wormwood. Shake and leave for 2 days with lid on.

2. In a pestle and mortar, grind fennel seeds, anise seeds, cardamom pods. Add this and the rest of the steeping ingredients to the vodka mix. Leave with lid on for one week.

3. Filter out vodka mix with fine sieve. Make the sugar syrup and add to taste.

4. Drink straight, as it is already sweet.


Angelica: First time I made this, I couldn't find Angelica (see below) I believe you can used candied Angelica if you can't find the plant, but you should adjust the sugar used accordingly. I finally found a plant of this for sale and it's pretty easy to grow - don't let it dry out too much, it likes the sun. You can simply cut off a stalk and chop it up when you are ready, or candy the stalks yourself and keep them until you are ready.

Star anise: This is a very pungent spice which is often recommended to be used in the place of angelica, if you can't find it. I'd advise not using it in the this recipe, as it is quite overpowering. If you do use it, use little. Angelica is very aromatic and I think probably makes this drink special. The drink is already enough aniseed flavoured without adding Star anise.

Sugar Syrup: To make, put equal amounts of sugar and water in a pan, so 1 and two thirds water, 1 and two thirds sugar, and bring to boil, simmer for 4 mins or so, allow to cool a little. I found this amount very sweet, maybe you'd like to use less. I used American sized cups - about 237 millilitres = 1 cup.

Coriander: If you grind your own seeds the powder is much more aromatic and lovely.

Ah, if only it were that easy! Unfortunately, this does not make absinthe, but a wormwood bitter, and a foul one at that.

This style of drink, or bitters, is a worthy drink in its own right and, I assure you, is not foul!
