If you don't have an oven, this pan-cooked alternative is worth a try. It would be vegan, but the egg white really lifts
the texture so it doesn't feel like you're eating simply fried flour with cheese on the top...! It isn't exactly like a pizza, but
it is good and filling and easy. You can load up the toppings, of course, like a normal pizza.
1/2 lb plain flour
1/2 teaspoon baking powder
2 and a 1/2 tablespoons of oil
1 egg white
Basil or other herbs
Mix the flour, salt, egg white, baking powder and 1 and a 1/2 tablespoon of the oil together, adding cold water a
little at a time until you can make a dough which you can knead (not sticky - don't add too much water at once).
Pre-heat a large, non-stick frying pan on a medium heat with the rest of the oil.
Whilst it is heating up, knead your dough on a floured board for a few minutes. Then roll out to the size
of your pan.
Add the dough to the pan and leave to cook until golden underneath.
Whilst it is cooking, grate your cheese etc.
Flip the pizza and spread tomato puree with a wooden spoon on the top, then add your herbs (a sprinkle of
dried basil perhaps, fresh is better), then the cheese. Leave to cook until golden brown underneath.
If you have a grill you can then melt the cheese under it for a couple of minutes (better).
