Cheese, Onion, Leek and Potato Pie

1 lb of Onion, leek and potato
8oz Puff pastry
6oz Mature cheddar cheese
Salt and pepper to taste
1 teaspoon mustard
1 egg, beaten
Chop onion, leek and potato. Ensure that potato is cut into small cubes. (I use half a leek, one potato and the rest onion)
Place onion in pan of boiling water for 5 minutes.
Add the potato and leek and boil for another 5 mins.
Whilst boiling, preheat oven to 200 oC, grate the cheese and grease pie tray
(about 9") with butter.
Drain well the pan of onion, leek and potato. Add salt, pepper, cheese, mustard
and most of the egg. Mix well. Set aside.
Split pastry into two, roll each on floured board until large enough to cover
pie dish. Place bottom in dish and prick all over with a fork.
Add filling to dish. Wet edges of pastry and place top on. Press down edges.
Trim excess pastry with knife.
Brush top with the rest of the egg, cut two slits in the top and bake until
golden brown, or about 30 minutes.
Allow to stand for a little while before serving.
