Cherry and almond sponge cake

This is a little quick and tasty cake using glacÚ cherries, almonds and vanilla. It only needs one egg.
4 oz plain flour
3 oz butter
2.5 oz dark sugar
1.5 tsp baking powder
Preserved cherries (glacÚ)
Preheat oven to 180oC
Grease a 8" round cake tin, line bottom with greaseproof paper
Heat butter until melted, add sugar, beat until smooth.
Allow to cool, add egg and little flour (stops curdling), beat until smooth.
Add vanilla essence (half teaspoon)
Sift in flour and baking powder. Mix, adding milk teaspoon at a time until you get a batter that is thick but pours very slowly, it should not be stiff to stir.
Cut handful of cherries in half and scatter in bottom of cake tin.
Add batter to cake tin, smooth, sprinkle handful of flaked almonds overt top.
Cook for about 12-15 mins until toothpick comes out clean.
Leave for 5 mins, remove from tin, then allow to cook on wire rack.
